New York State of Mind BY CHRISTINA L. RICHARDS, Vice Chargée de Médias Sociaux , AND WILLIAM M. HARRIS, Bailli ON JUNE 24, the Albany Bailliage enjoyed a New York State-themed dinner at Chez Mike, complete with clas- sic New York tunes played at the reception. Chez Mike is owned by Culinary Institute of America-trained Executive Chef Michael Cohen, who based the evening's menu on dishes associated with various regions of the Empire State. Locally sourced ingredients reinforced the "I Love NY" theme. The courses were accompanied by excep- tional wines from the Finger Lakes and the North Fork of Long Island. Some of them had earned ratings of 90 or more points from the Wine Spectator —a long overdue acknowl- edgment of the quality of wines produced in New York. Chef Cohen took attendees to Buffalo for a clever twist on traditional chicken wings before heading to Katz's Delicatessen in the Big Apple for smoked pastrami and out-of-this- world knishes. Rounding out the meal was a Brooklyn specialty—egg cream—served with black-and-white cookies. Chevalier George Weissman, Dame Marissa Wiley, and Maître Rôtisseur A.J. Richards offered insight- ful commentaries and acknowledged Chef Cohen and his team. Members departed to the strains of "New York, New York"—just like the Yankees after an at- home win.
