Spring Adventure BY GRAIG SMITH, Vice Chargé de Presse ON MAY 22, the Cincinnati Bailliage dined at the Parisian-style Restaurant L, co-owned by Chef Jean-Robert de Cavel and Maître d' Richard Brown. After arriv- ing in Cincinnati in 1993, Chef de Cavel, who was born and educated in France, became chef de cuisine at the legendary Maisonette restaurant. He left in 2002 to join a partnership and serve as execu- tive chef at Jean-Robert at Pigall's. Since the closing of both the Maisonette and the four-star Pigall's, Restaurant L has claimed its place as southwest Ohio's pre- mier fine-dining establishment. Attendees passed through the marble-accented lobby to arrive in the cozy bar, where they sipped champagne, nibbled appetizers, and socialized. The dining room's massive doors were opened to reveal gorgeously set tables with velvet banquette seating surrounding a fifteen- foot steel tree adorned with lanterns and flowers. Chef de Cavel used time- honored French techniques and seasonal ingredients in preparing the exquisite meal, whose highlights included black sea bass and veal short ribs. Vice Echanson Mary Horn and her wine committee chose the perfect wines to pair with the dishes. Attendees were unanimous in their praise of the mas- terful collaboration by Vice Conseiller Gastronomique Chuck Hong, Chef de Cavel, and Maître d' Brown.
