Spring Awakes! BY ROSALIE LOWERY, Vice Chargée de Presse DESPITE THE OPTIMISM of a spring menu and tulips adorning the dining tables, unusually cool weather con- tinued to taunt Springfield Bailliage members on April 20, 2018. But attendees quickly dispensed with coats and gloves at Maldaner's Restaurant, trading them for the appetizers and bubbly served at the reception. Established in 1884, Maldaner's is one of the oldest restaurants on historic Route 66. Currently co- owned by Chef Michael Higgins and his wife, Nancy Higgins, the venue retains the charm of bygone eras. Chef Higgins relies on sea- sonal regional and local products, particularly the herbs and heirloom vegetables grown on his rooftop garden. This forward-thinking use of space also incorporates solar panels and is a home to his beehives. The six-course menu utilized items reflective of spring's bounty, including just- in-season morels for the chef's signature morel mushroom pie. Another delightful specialty was rack of lamb, frenched in the traditional manner. The meal closed with tender spring rhubarb gâteau Basque. (Fun fact: although thought by many to be a fruit, rhu- barb is technically a vegetable, notwithstanding one New York court declaring otherwise.) Departing confrères received a dinner favor of Chaîne earbuds—perhaps a supplication to the Spring Budding gods? Only their bailli knows for sure.
