Homage to Spring BY TODD ARKEBAUER, Vice Echanson FOR THE CHICAGO Bailliage's fête du printemps on April 16, 2018, members gathered at George Trois res- taurant to enjoy the cuisine of Proprietor/Chef Michael Lachowicz. With snow gently falling outside, a homage to spring may have seemed premature, but the atmo- sphere inside the elegant establishment was warm and welcoming. The extraordinary seven-course dinner showcased luxury ingredients such as ose- tra caviar, foie gras, and truffles. The oenophilic highlight was a trio of 1988 bordeaux blends from Châteaux Latour, Margaux, and Pichon- Longueville. During din- ner, Vice Echanson Honoraire Manfred Raiser offered insightful commentary about the French wines chosen from the chapter's cel- lar. Chef Lachowicz and Conseiller Culinaire Provincial Christopher Koetke—who were former colleagues at Le Francais restaurant— also commented on the food and wine pairings. Conseiller Gastronomique National Mon Roldan awarded a Bronze Star of Excellence to Vice Chargé de Missions Jamie Garard for his outstanding work. At eve- ning's end, Conseiller Gastronomique National Roldan thanked the talented restaurant team and presented Chef Lachowicz with a commemorative Chaîne plate. Spring may have been playing hide-and-seek in Chicago, but attendees departed with hearts warmed by the gracious hospitality and beautifully crafted French cuisine of George Trois.
