Dîner Extraordinaire BY CELIAMARIE MOORE, Vice Chargée de Presse Honoraire A NUMBER OF Oahu Bailliage members were fortu- nate attendees of an exclusive dîner extraordinaire at Senia restaurant on May 21. Senia occupies a late-nine- teenth-century building in Honolulu's old Chinatown neighborhood. With its exposed brick walls, subdued colors, and huge open kitchen, it imparts a cool and organized serenity. There are no distractions: Senia is all about the exquisite gas- tronomic journey. As stated on the restaurant's website, Co-Owners/Chefs Chris Kajioka and Anthony Rush call their cuisine "Regional American," which they describe as a "cultural intersection of the chefs and their experiences that always pay(s) homage to Hawaii's abundance of beautiful ingredients." Attendees were greeted with a signature cocktail created especially for this event. Each dinner course was an artful masterpiece of sculptural shapes, savory morsels, and the most deli- cate garnishes. The remarkable presentations invited admiration, giving diners pause to reflect upon each creation before their first taste. Selections from Senia's well-curated wine cellar were beautifully paired with the menu. At evening's end, Bailli John Magauran thanked Chefs Kajioka and Rush and their enthusiastic young apprentices for creating an innovative, memorable, and cutting-edge dining experience for all in attendance.
