Spring and Spice and BY HELEN CAPPUCCINO, Northeast Chargée de Presse Provincial/Buffalo Bailli THE BUFFALO BAILLIAGE closed its Chaîne season on May 20 at 100 Acres restaurant in the Hotel Henry Urban Resort. In the midst of a large-scale renovation that has seen the addition of hip art displays, chic bars, and eclectic guest rooms, the landmark property has become a fashionable destination. The star of the evening was not the setting, however, but the chef. A veteran of some of Buffalo's top restaurants, Chef Michael Thill embraces 100 Acres' farm-to-table mandate, using prod- ucts that are sourced locally or grown onsite. For this menu, he focused on subtle, exotic spices that are largely indigenous to the Middle East and northern Africa. The wines were from the same general region; one of the favorites was Château Musar Red 2009 from Lebanon. With the presentation of each dish, Chef Thill gave a description of its ingredients, their sourcing, and his inspiration. The chef's youth and creativity, coupled with the professional waitstaff's impeccable service, wowed all in attendance. Special thanks go to Manager Paul Boudreau and Owner Geno Principe, a special friend of the Buffalo Bailliage and someone who is known for his other beautiful properties, including the nationally regarded Mansion on Delaware Avenue.
