[forged, farmed, fished] BY WILLIAM M. HARRIS, Bailli ENCOUNTERING GOURMET FARE in unlikely places is always a pleasant surprise. Such was the case for Albany Bailliage members on April 22 who traveled to the sleepy village of Hudson Falls to dine at [forged] restaurant & bar. Vice Chargée de Médias Sociaux Christina Richards and Executive Chef/Maître Rôtisseur A.J. Richards opened [forged] in the town's former court- house, where the jail cells that once held ne'er-do-wells are now used for food storage. Chef Richards worked under Grant Achatz at Alinea. As true foodies, he and Vice Chargée de Médias Sociaux Richards use their rare days off to dine at some of the best restaurants in the country. The couple went all out for this special evening. In addition to several sumptuous appetizers, attendees were treated to spe- cialty cheeses produced by Dancing Ewe Farm Owners Jody Somers and Luisa Scivola. Cocktail historian and mixologist Mike Smith whipped up some amazing concoctions using American gins and French vermouth while regaling the group with tales of how various cocktails were created. The subsequent nine-course dinner featured mul- tiple ingredients resulting in complex flavor profiles and was a resounding success, as evidenced by the thunder- ous applause showered upon the husband-and-wife team and their staff by appreciative confrères.
