Root to Table BY VICTOR S. SLOAN, Vice Chargé de Presse THE GARDEN STATE Bailliage held its first event of 2018 on February 25 at Bistro Rouget, located in Stockton, New Jersey. Having previously dined at Owner/Chef Brian Held's restaurant that bears his first name, confrères were eager to try his new French- inspired bistro. For Chef Held, the dream of becoming a chef began with receiving a Wine Spectator scholar- ship to the Culinary Institute of America. He gained valuable experi- ence working in various kitchens before opening Brian's in 2012. Bistro Rouget came along in 2017. Chef Held is com- mitted to using local ingredients. Since it was February, he and Echanson Provincial/ Bailli George Staikos developed a menu focused on root veg- etables. A standout dish was salt-baked beets with horseradish crème fraîche. Attendees rose to the occasion for this BYOB event by bringing treasures from their cellars. They had received high-level guidance from Echanson Provincial/ Bailli Staikos and Vice Echanson Mike Beneduce, and their imaginations flew. Two highlights were Ramey Ritchie Vineyard Chardonnay 2007 and Domaines Schlumberger les Princes Abbés Riesling 2005. Perhaps the most unusual contribution was a Nexus Merlot from Malta. Despite the cold rain outside, the cozy atmosphere inside Bistro Rouget left all who were fortunate to attend feeling warm and content.
