A Feast Fit for a God BY KAREN SPERRAZZA, Vice Chargée de Presse EAGER BUFFALO BAILLIAGE members convened at Bacchus Wine Bar & Restaurant on April 22 to enjoy a taste of the Pacific Northwest. At a long, candlelit table, confrères toured the region via characteristic dishes from land and sea, served with wines from Oregon and Washington State. Owner/Chef Brian Mietus created the deli- cious menu. Among his many accolades, Chef Mietus was a featured chef at the James Beard House and was named one of the "Best Chefs America" by the orga- nization. The Wine Spectator has recog- nized Bacchus's wine list for ten consecutive years—an honor befit- ting a restaurant named for the Roman god of wine. Though members curbed the impulse to engage in the ecstatic revelry associated with a bacchanalia, their resolve was tested when, after four decadent courses, chocolate soufflé was presented. Paired with Barnard Griffin Port, it was ecstasy, indeed. The words of Latin poet Catullus perfectly captured the ethos of the evening: …with wine, strong, sparkling, bright and clear/ Our host decrees no water here/Let dullards drink the Nymph's pale brew/The sluggish thin their blood with dew/For such pale stuff we have no use/For us the purple grape's rich juice/Begone, ye chilling water sprite/Here burning Bacchus rules tonight!
