Excursion to Commonwealth Bistro BY GRAIG SMITH, Vice Chargé de Presse DESPITE UNSEASONABLY COLD weather on April 16, 2018, Cincinnati Bailliage members crossed the Ohio River in search of culinary treasure. Chef Chris Burns and Tess Burns recently opened Commonwealth Bistro in Covington, Kentucky. The eatery, which spe- cializes in gourmet Southern comfort food, has already become wildly popular. The project was three years in the making, as the couple con- verted two historic buildings into a warm space that features a cozy bar, exposed brickwork, and large windows that offer diners great views of the kitchen. Members brought bottles of their finest wines to share, several of which were enjoyed with appetizers at the reception. Highlights of the subsequent four-course meal included an imaginative spring pea soup with country ham and wild boar ragù with gnocchi and wild mushrooms. These dishes were prepared in full view of attendees, adding a special charm to the evening. All in attendance agreed that Vice Chargée de Missions Carmen Parks once again managed to find a true gem of a restaurant that undoubt- edly will be revisited by many Cincinnati confrères.
