Island Food and Wine Festival Dinner BY URS E. SCHMID, Chevalier EVERY APRIL, THE Galveston Island Wine Festival brings thousands of visitors to the island. The event is put on by Yaga's Entertainment, a company run by Galveston Maîtres de Table Restaurateur Mike Dean and Elizabeth Dean. Each year, during the city- wide festival, the Galveston Bailliage holds its own Chaîne- sponsored dinner. On April 12, 2018, members gathered at the American National Insurance Tower, which offers spectacu- lar views of the historic downtown as well as the Houston Ship Channel. Executive Chef/ Vice Conseiller Culinaire Urs Schmid delighted diners with some of his signature dishes, including a personal favorite—spätzle. One of the island's few classically trained French chefs, the Swiss-born chef brings his culinary expertise and pas- sion to every meal he prepares. Adding to the fun, the group had the privilege of selecting the grand-champion wines in both the white and red categories. The wines had already been whittled down from more than one hundred candidates. The blind tasting is always a thrill as palates are pushed to the limit. Members concentrated fiercely to deduce even the tiniest perceived perfections, compared notes, and found their favorites—and then crossed fingers while the winners were called out.
