Induction Fête at the Westgate BY MARIE ADDARIO, Chargée de Presse National A DISTINGUISHED MEMBER of the Leading Hotels of the World, the Westgate Hotel stands among sleek towers, flourishing businesses, and posh condos over- looking San Diego Bay. On September 10, the La Jolla Bailliage gathered at the elegant hotel for an induction gala planned by Bailli Dominick Addario and General Manager/ Maître Hôtelier Richard Cox. Executive Chef/ Maître Rôtisseur Fabrice Hardel designed and executed the delicious meal. The Westgate has an international clientele, and its menus need to satisfy a gastronomically sophisticated bunch. Seafood is supreme in San Diego, and the hotel has gained a repu- tation for excellence in preparing it. "I grew up in a village in northeastern France, where all my friends were fishermen. Seafood is in my blood," Chef Hardel noted. Upon moving to the United States in 1997, the chef worked at the Ritz-Carlton in St. Louis. In 2001, he joined the Westgate as executive chef. Bailli Délégué Harold Small, assisted by Bailli Addario, inducted Chef Rôtisseur Joey Rosas from the Rancho Santa Fe Golf Club and Maître Rôtisseur Marko Dedic of La Valencia Hotel. Vice Conseiller Gastronomique Richard Esgate was elevated. During dinner in the famous Fontainebleau Room, a classical guitarist and operatic vocalist serenaded the group with selections from arias and European love songs.
