There Are No Chaîne Borders BY HELEN CAPPUCCINO, Northeast Chargée de Presse Provincial/Buffalo Bailli FOR THE SECOND consecutive year, the Buffalo and Toronto bailliages held a joint event at Peller Estates Winery in Niagara-on-the-Lake, Ontario. Just as the previous year extended beyond the North American bond with attendees from London and the Caribbean, this sold- out event on August 11 drew confrères from the far-reaching cities of Bordeaux and Beijing. The reception took place on the sun-soaked patio. The group then participated in an icewine tasting in the 10Below Icewine Lounge, which is con- structed entirely of ice, including its shelves, bar, and chandelier! The chilly interior was a welcome relief from the heat of the day. Dinner was served in Peller's award-winning Barrel Cellar—a premier Niagara-on-the-Lake dining destination. Executive Chef Jason Parsons brings extraordinary credentials to Peller; his résumé lists stints at Relais & Châteaux properties and Michelin-starred restaurants; James Beard House appearances; work with culinary legends Charlie Trotter, Albert Roux, and Gordon Ramsay; and seven years on a Canadian talk show. His superb five-course meal was paired with Peller Estates premium VQA wines. During the evening, new friendships were forged and promises for future events made as the very special U.S./Canada Chaîne camaraderie deepened and added new alliances with Bordeaux and Beijing. Attendees departed with special pins commemorating the event.
