Bonanza BY STEPHANIE BLASER, Vice Chargée de Presse VICE ECHANSON TODD Arkebauer was met with some skepticism when he unveiled "British Bubbly" as the theme for the Chicago Mondiale's event hosted by the Gage Hospitality Group on March 5, 2018. "The only bubbles coming out of the U.K. are in pints of ale," one mem- ber joked. Yet as attendees soon learned, England is fast becoming a source of world-class bubbles, winning awards and beating major champagne brands in blind-tasting competitions. The Brits are so serious about their sparkling wines that they have given them a name: "British Fizz"—a protected term for specific sparkling wines from England. Beverage Director/ Sommelier Jon McDaniel led the explo- ration of British Fizz. Confrères learned that more than 3,500 acres across England are now devoted to wine production, and 60 percent of all wine produced in Great Britain is spar- kling. Much to their delight, they sampled all five of the British producers available in Illinois. To complement the sparkling wines, Executive Chef Christopher Gawronski created a quintessentially British menu with Ashdown pigeon pudding as its cen- terpiece. Sommelier McDaniel paired each course with two sparkling wines and invited attendees to voice their preferences. Everyone definitely learned what all the "Fizz" was about!
