Tasting Our Bubbles BY F. IMOGENE WHITE, Vice Chargée de Presse ORLANDO MONDIALE MEMBERS indulged in the delightful effervescence of champagne and sparkling wine at their closing event of the season on April 28. Vice Conseiller Gastronomique Paul Manos and his wife, Stacey Manos, hosted the event at their beautiful Winter Park home. Vice Echanson Tim Varan, wine specialist and owner of Tim's Wine Market, which has multiple locations throughout Central Florida, led the group on an excursion into the mysteries of sparkling wine. Attendees tasted offer- ings from France, Italy, and Spain. Three different methods were used to produce the sparkling wines sampled. The first was the Charmat Method, used for an Italian wine made with glera grapes. The Méthode Traditionnelle was utilized to produce most of the bubbly tasted during the evening. The final spar- kling wine tasted was produced using the Méthode Ancéstrale—the oldest of the three winemaking methods. The sparkling wines were paired with various foods, demonstrating their ability to add depth to vegetables and meats and to cut through rich, fatty dishes as well as possessing the acidity to stand with fruit and chocolate. As the bubbles rise to the top in champagne, so too was the food elevated by Vice Echanson Varan's masterfully curated selection of sparkling wines.
