BY PAUL KOULOGEORGE, Mid-Atlantic Chargé de Presse Provincial THE WINES OF Burgundy are at the pinnacle of the wine pyramid, but they are also some of the most difficult to obtain. Family-based operations tend to produce exceptional-quality wines made from grapes grown in very small plots. Factors such as hill location (for example, mid-slope versus bottom) and orientation (for example, south-facing versus southeast-facing) can determine whether a wine receives a "Grand Cru" or a "Villages" designation. Weather conditions also limit the "best-of-the-best" echelon to certain vintages. The Philadelphia Mondiale is fortunate to have many members with extensive cellars. At the group's season-closing event at Lacroix restaurant on August 12, delicious cuisine was paired with rare grand cru and premier cru chardonnays and pinot noirs from Burgundy. The selections showcased the breadth of expression of Burgundy's chardonnay and pinot noir grapes. William Fevre Chablis Grand Cru 2008 expressed a complex mix of oyster-shell minerality, bright acidity, and green fruit, while Camille Giroud Latricières-Chambertin Grand Cru 2007 offered plum and raspberry aromas, a spicy mouthfeel, and gentle tannins. Daniel Rion & Fils Clos Vougeot Grand Cru 2005 was a powerful wine with spicy black fruit and layers of flavor. Executive Chef Jonathan Cichon, a longtime friend of the Chaîne, crafted a Burgundy-themed menu to complement the extraordi- nary wines.
