Fine Wine Pairing and Sharing BY JEFF KWARSICK, Vice Chargé de Presse THE FORT WORTH Mondiale's member-provided wine events are always a hit, as so many members have exquisite cellars, discerning palates, and gener- ous hearts. At Ellerbe Fine Foods on July 26, members enjoyed a gourmet meal that required them to test their wine-pairing skills. Vice Echanson Weston Eidson and Vice Conseiller Gastronomique Jean Eason Moore worked with Co-Owner/Executive Chef Molly McCook, Co-Owner/ General Manager Richard King, and Sommelier Chester Cox to plan the menu in advance, so that attendees could make informed choices from their cellars. With more than twenty- five high-quality wines from which to choose, even the most discriminating tasters could find at least one pairing to champion. Chef McCook's menu featured locally sourced produce from Ellerbe's many partner-farmers—a practice that has long ensured a loyal following at this fine-dining estab- lishment. Attendees enjoyed sampling various wines with the sumptuous seasonal cuisine. New World pair- ings were generally favored over Old World classics, though without much effort, diners could find a stray burgundy or montrachet! The consensus was that it would have been delightful to have a wider variety of ports to complement the chocolate crêpe finale, but the decadent dessert was a hit nonetheless!
