Tasting the Best of Vietnam BY WILLIAM BABASH, Vice Chargé de Presse ON MARCH 15, 2018, the Washington, D.C. Bailliage was treated to a wonderful Vietnamese feast at Rice Paper—Taste of Vietnam, located at the Eden Center, a shopping and cultural hub in Falls River, Virginia. Even among the center's many popular restaurants, Rice Paper is a standout. Its accolades include mak- ing the Washingtonian's "100 Very Best Restaurants" lists for 2015 and 2016. Co-Owner/Chef Phuong Ho is from Rach Giá, a provincial capital on the eastern coast of the Gulf of Thailand. He has had a lifelong passion for food and started cooking at a young age in Vietnam. He began working in restau- rants after his arrival in the United States in 2008. In 2011, he opened Rice Paper with his cousin, Co-Owner Mai Lam, along with her mother. Eager diners have been lining up outside its door for a table ever since. With a foundation of family recipes for marinades, soups, and other spe- cialties, Chef Ho reveals his creativity, innovation, and skill in every dish that he prepares. Attendees of the sold-out event enjoyed an array of Vietnamese delights that showcased the range of that country's cuisine as well as of Chef Ho's talent. G WASHINGTON, D.C.
