Homage to Old Friends…and a New Sibling BY JOHN J. BLASER, Vice Chargé de Médias Sociaux IT'S CHALLENGING ENOUGH to create a menu for sixty diners that progresses seamlessly from traditional to modern and rustic to refined. It's even harder when the dishes come from two kitchens representing two dra- matically different restaurant concepts. That's exactly what Partner/Executive Chef Andrew Zimmerman and Chef de Cuisine Adam Zoscsak accomplished for the Chicago Bailliage on November 20. Their menu featured signa- ture dishes from Chef Zimmerman's Michelin- starred, fine-dining venue Sepia, along with favorites from Sepia's new sister restaurant, Proxi, which specializes in global street food. "I hope you [saw] the difference in the courses," Chef Zimmerman told attendees. "Some were more simple and direct, and some were more subtle and composed." The occasion also marked a reunion with an old friend, Sepia Managing Partner Emmanuel Nony, who was hosting his fourth Chicago Chapter event. "It's always been a great pleasure and honor to host the Chaîne," he said. Another highlight was the inductions of Chevalier Scott MacGregor and Dame de la Chaîne Mary MacGregor. Conseiller Gastronomique National/Chicago Bailli Honoraire Mon Roldan did the honors, and thus the MacGregors were able to wear their Chaîne ribbons for the first time.
