Winter Wonderland Induction Gala BY DAWN H. GROHS, Vice Chargée de Presse FESTIVELY CLAD ASHEVILLE Bailliage members arrived at the Inn on Biltmore Estate on December 10 for a holiday induction gala. Music filled the hall as attendees enjoyed deli- cious appetizers and champagne. The grand ballroom had been transformed into a win- ter wonderland graced by snow-laden boughs with crystal accents. The evening opened with the inductions of Maître Rôtisseur Christina Franklin and Chevalier Albert Koch. Special guest Bailli Provincial Tony Hirsh officiated the ceremony. Assisting him were Bailli Provincial Honoraire Thomas Ruff and Bailli Beth Poslusny. The menu illus- trated the extensive talents of Head Chef Sean Eckman and his team. Culinary creativity ruled the evening. Foie gras in the shape of Christmas trees was accompanied by pumpernickel "gifts." The dessert appeared as Frosty the Snowman. Each dish was paired with the perfect liquid complement, including a hard cider from New York and Domaine Maurice Schoech Mambourg Grand Cru 2011 from Alsace. The magical evening closed with Nutcracker selec- tions performed by lead dancers from the Asheville Ballet. The duo danced to the familiar strains of Tchaikovsky's masterpiece, sending confrères home with visions of sugarplums and a large infusion of holiday spirit.
