From the Queen of Lakes to the King of France BY CHRISTINA RICHARDS, Vice Chargée de Médias Sociaux CHEVALIER VICTOR GUSH had raved so much about the Lake George Club that on October 22 Albany Bailliage members headed north to experience it for themselves. After enjoying the bril- liant fall foliage on the ride through the Adirondacks, attendees arrived to find the club- house graced by white petunias. The flowers pay homage to club founder Emil Strand, who grew them on his property each spring. Executive Chef Tony DeStratis deliv- ered on his promise of a culinary journey from the "Queen of Lakes to the King of France." Fittingly, the meal opened with a catch from nearby waters. Produced in the Finger Lakes region, the accompanying riesling had received an impressive 92-point rating. After an indigenous game dish, Chef DeStratis moved further across the Atlantic with a delectable stur- geon preparation, followed by a dish from Spain. The meal finished in France; Pastry Chef William Whitty's port-poached pear was as lovely to look at as it was to consume. Chef DeStratis, Guest Chef/Chef Rôtisseur Tim Warnock, General Manager William Finnen, and their respective teams were heartily applauded by the group for this truly extraordinary culinary experience.
