56th Induction Dinner at Highlawn Pavilion BY DIANA STROUP, Vice Chargée de Presse THE VIEW OF the Manhattan skyline from the Highlawn Pavilion in West Orange, New Jersey, is noth- ing short of spectacular. The venue's name derives from the large lawn area atop Eagle Rock Reservation, where years ago pic- nickers took a respite from their trek to the plateau. During the American Revolution, General George Washington set up camp there, taking strategic advantage of the overlook. In 1903, Thomas Edison employee Edwin S. Porter filmed part of The Great Train Robbery at the site. In 1985, the Knowles family endeavored to restore a decrepit, turn-of-the- century structure called the Highlawn. They transformed the former refreshment stop into a world-class restaurant furnished with Italian antiques. New Jersey Bailliage members held their fifty-sixth annual induction dinner there on January 26. At the reception, attendees admired the views of the city lights and skyline. Executive Chef Tristan Tevrow, who was classically trained in French culinary technique, infused his menu with Asian, Latin, and Middle Eastern flavors. Vice Conseiller Culinaire Kurt Knowles paired French wines with the courses. As a unique twist with dessert, there was a choice of a nice port wine or a whiskey blend.
