Around the World with Chef Römhild BY MELISSA P. DANIEL, Vice Chargée de Presse ON AUGUST 12, 2017, at Table 100 in Flowood, Mississippi, the Jackson Bailliage enjoyed an innovative fusion dinner created by Executive Chef Mike Römhild. For Chef Römhild, "fusion" extends beyond cuisine style to mean the unique synthesis of his global travels and experiences. After his classical culinary training in Switzerland, he served as executive chef for the world- class luxury cruise line Regent Seven Seas Cruises. Eight global circumnavigations later, he came to Mississippi, and he has been fusing unique international flavors with domestic favorites ever since. His success has been over- whelming. Sous-Chef Payton Warren did an excel- lent job of assisting Chef Römhild. Of note was that some courses were paired with regional spirits rather than wines. Sommelier Tiffany Bobbs enlight- ened diners with her superior knowledge of all of the libations. Despite having enjoyed the evening, attend- ees departed with heavy hearts; Chef Römhild had announced that it was his last Chaîne dinner in Mississippi. The next step of his career will take him to Miami. Confrères realize how fortunate they have been to have a chef of such caliber in Mississippi. They will miss him immensely.
