Tri-National Treasure BY KAREN SPERRAZZA, Vice Chargée de Presse INNISKILLIN WINERY IN Niagara-on-the-Lake, Ontario, was the setting for a tri-national Chaîne event on October 20. Confrères from London and Toronto joined Buffalo Bailliage members in enjoying the best of the Niagara region. From Toronto came Maître Rôtisseur Paul Hoag, Leigh Hoag, Dame de la Chaîne Marna Santo, Chevalier Bill Santo, and Chevalier Dave Hannon. Hailing from London were Professionnels du Vin Judy Van Niekerk and Tiny Van Niekerk. Other attendees were Moscow Bailli Honoraire Lois Gilbert, Scottsdale Vice Echanson Honoraire Cary Tenenbaum, and Vancouver Vice Chargée de Missions Ruth Grierson. A vineyard recep- tion with appetizers and sparkling ice wine preceded a tour of the property. By sunset, the crisp autumn air encouraged the group to move indoors for dinner. Inniskillin Chef Tim Mackiddie, who is also chef for the Jackson-Triggs Niagara Estate Winery, has great charisma. Attendees were delighted by his innovative preparations and infectious enthusiasm. Ice wine was incorporated into every offering, from the butter on the table through dessert. Local ingredients also featured prominently in the five-course menu. At evening's end, Chargée de Presse Provincial/ Bailli Helen Cappuccino presented confrères with pins commemorating this spectacular evening with new friends from around the globe.
