The Perfect Chaîne Weekend BY PAUL KOULOGEORGE, Mid-Atlantic Chargé de Presse Provincial THE U.S. CHAÎNE'S Mid-Atlantic Region has fourteen bailliages, spread across Delaware, the District of Columbia, Maryland, New Jersey, Pennsylvania, Virginia, and West Virginia. Bailli Provincial John Fannin III and Conseiller Gastronomique Provincial Paul Schulze organized a chapitre in Philadelphia from April 19-22 to encourage cross-chapter camaraderie and welcome new confrères. Approximately 120 members attended the event, which included dine-arounds, business meetings, and an induction gala on April 21, which was also World Chaîne Day. Confrères were honored to be joined by Bailli Délégué Harold Small, who served as inducting officer. The venues for Thursday evening were chosen to highlight the best of Philadelphia cuisine. Chargé de Presse Provincial Paul Koulogeorge hosted a dinner at Zahav, whose owner, Chef Michael Solomonov, received the James Beard Foundation's highly prestigious "Outstanding Chef" Award in 2017. Bailli Thomas Knox hosted members at Bibou, owned by Chef Pierre Calmels. Bibou is one of Philadelphia's premier French haute cuisine restaurants. Vice Conseiller Gastronomique Honoraire Peter Horty hosted a dinner at Laurel. The brainchild of for- mer Top Chef winner Nick Elmi, Laurel is a paean to modern American cuisine. Lastly, Philadelphia Officier Niels Haun and Chevalier John Yao hosted confrères at Le Chéri, a French bistro near Rittenhouse Square. Lunch on Friday was hosted by Conseiller Gastronomique Provincial Schulze.
