From Boots to Beluga BY KATHY SHAY, Southwest Chargée de Presse Provincial SOUTHWEST CONFRÈRES GATHERED in Austin from March 2-3 to celebrate the region, its new members and élevés, and its young chefs. Welcomed by hosts Bailli Provincial Bill Salomon and Austin Bailli Dennis Shay, attendees were treated to some of the best that Austin (and Russia!) has to offer. Day One coincided with Texas Independence Day; thus, the evening's attire was "Texas chic." Cowboy hats, bolo ties, fringed dresses, and boots abounded. The warm evening allowed for drinks and appetizers on the deck of Parkside res- taurant, as a Texas trivia game challenged even the most vested Texans. Chef Victor Sandoval prepared fine offerings from both land and gulf—many of them with a Texas kick. The chocolate torte was laced with whole blueberries that provided an unexpected, yet tasty pop in the mouth. Saturday was packed with activities.
