Dinner at Birchrunville Store Cafe BY KATHLEEN BOYLE, Vice Chargée de Presse WIND YOUR WAY along curving roads, past fields, farmhouses, and churches, to the Birchrunville Historic District in Chester County, Pennsylvania. Built in 1898, the Birchrunville General Store now fea- tures showroom-style windows repurposed to hold corks from bottles of fine wines. Leaded glass doors lead to Owner/Chef Francis Pascal's Birchrunville Store Cafe, which has long been one of the area's most coveted places to dine. Using classi- cal techniques and local products, Chef Pascal challenges himself to explore nuanced flavors and textures in his cuisine. He likes to surprise diners with preparations enhanced by unusual ingredients and palate- stimulating sauces. On October 15, the Delaware Valley Mondiale held a Château Lynch-Bages event at his venue. Vice Chargée de Missions Jackie Allen and Chargé de Presse Provincial Percy Nikora organized the vertical tasting, which opened with Blanc de Lynch-Bages 2015—a rare acqui- sition. The tasting covered four decades of the famed Château Lynch-Bages bordeaux, moving from the well- integrated, medium-bodied 2012 and 2005 vintages, to the soft, earthy 1996 vintage, and finally to the mature 1970 vintage. The journey ended with the complex, yet somewhat sweet, Château Haut-Bages Averous 1985.
