A Stop on the Sublime BY MARSHALL BERENSON, Northeast Chambellan Provincial/Boston Bailli HARVARD SQUARE SEEMS to have become the cen- ter of fine dining in Boston. On September 10, 2017, Boston Bailliage mem- bers gathered there to dine at acclaimed Restaurateur Garrett Harker's Les Sablons, where Executive Chef Jeremy Sewall creates world-class French- Continental cuisine. Named for a Paris Metro stop, Les Sablons occupies the former Conductor's Building for the Harvard Square trolley. Bentel & Bentel Architects artfully transformed the space. Boston magazine called Les Sablons "a paean to the timeless- ness of classic French cuisine in an age of trendoid chefs glibly renouncing Escoffier for unchecked eclec- tic fusion." In 2017, the same source named Les Sablons Sommelier Lauren Daddona the city's "Best Sommelier." Mixologist Jackson Cannon is known for elevating the restaurant's specialty craft cocktails. Boston officers collaborated with Chef de Cuisine Brian Rae on the spectacular French repast. In the ele- gant dining room, diners found fine-art photos of David Bowie and Grace Jones surrounded by a Play-Doh pop- art display. Very hot haute! Each dish was as beautiful as it was delicious. The level of execution from start to finish made this a meal that transcended gourmet dining to enter the realm of the sublime.
