In Home for BY VICTOR S. SLOAN, Vice Charg é de Presse ON DECEMBER 10, Echanson Provincial/Bailli George Staikos and his wife, Christi Staikos, graciously hosted the Garden State Bailliage in their lovely home. Corporate Chef/Vice Conseiller Culinaire Honoraire Michael Salvatore, with assistance from his nephew Rôtisseur Damien DeMarco, prepared the dinner. Chef Salvatore founded Bacchus Hospitality Group, LLC, which shepherds emerging premium brands into the food-service space. Selected by Echanson Provincial/ Bailli Staikos, the wines included old- and new-world vintages from Spain, France, and Oregon. In addi- tion to sparkling wine, attendees enjoyed the appetizers with a cock- tail made with Tomr's Tonic, ginger beer, a splash of Cuban rum, and an apple-vodka infusion. The culinary highlight was the intermezzo of vodka- frozen grapes. The "Eton Mess" dessert was prepared by Vice Chargé de Presse Victor Sloan, who studied pastry under Stephen Durfee at what was then Peter Kump's New York Cooking School. This treat was named after and served at the famous English school that is the alma mater of Princes William and Harry. A final highlight of the evening was a toast to the eight new members who had been into inducted into the Garden State Bailliage the previous month.
