BY MARIE ADDARIO, Vice Chargée de Presse National DERIVING FROM THE Latin vivax —meaning long- lived or vigorous— vivace is a musical term that means "to perform in a lively or spirited manner." Lively and spirited certainly describe the AAA Four-Diamond Vivace restaurant in the Park Hyatt Aviara Resort. On December 4, Executive Chef Pierre Albaladejo and Chef de Cuisine Kevin McCarthy created a deli- cious meal for the La Jolla Bailliage. Chef Albaladejo's impressive career includes stints at the acclaimed Lucas Carton and Café de Paris and as a private chef to former French Mitterrand. The vivacious reception was held on a terrace overlooking the lush golf course. Just beyond is the Batiquitos Lagoon, which ebbs and flows with the mighty Pacific. In this setting, confrères enjoyed sumptuous hors d'oeuvres served with green apple martinis. Dinner was paired with wines from Vivace's award- winning cellar, affirming the Wine Spectator's praise for the restaurant's "robust wine list featur[ing] some of Italy's finest as well as some hidden gems from lesser known regions…." Bailli Dominick Addario contrib- uted an Australian Lillypilly, which complemented the foie gras, and Louis M. Martini Monte Rosso Vineyard Cabernet Sauvignon 1999, which accompanied the Zabuton beef course.
