Gala at Maple & Ash BY TODD ARKEBAUER, Vice Chargé de Presse TRADITIONALLY, THE CHICAGO Bailliage has hosted its French-inspired holiday galas in some of the city's finest hotel ballrooms, but on December 14, members enjoyed an all-American sea- sonal celebration at Maple & Ash—the Gold Coast's newest and most elegant steakhouse. Following the reception, attendees moved to the main dining room, with its high-windowed ceiling, dramatic drap- ery, contemporary lighting, and elegant white tablecloths. Chambellan Provincial/ Bailli Mon Roldan introduced Managing Partner Brian O'Connor and Partner/ Executive Chef Danny Grant ( Food & Wine's "Best New Chef 2012"), who had previously hosted confrères at the acclaimed Elysian and RIA restaurants. Members were delighted to witness the duo's induction into the Chicago Bailliage before the feast commenced. Using Maple & Ash's wood hearths, Chef Grant presented waves of extraor- dinary smoke-kissed offerings, including roasted seafood towers and flame-grilled porterhouse steaks that satisfied even the most ravenous diners. American wines enhanced the hearty fare. As evening's end, awards and gratitude were extended to the Chicago Chapter's new professional members, Maître Restaurateur O'Connor and Maître Rôtisseur Grant. This holiday gala may have broken with tradition, but all enjoyed an evening of delicious fare and conviviality. Vive la Chaîne!
