Sense- Sational Show at Schwa BY TODD ARKEBAUER, Vice Chargé de Presse A RESERVATION AT the Michelin- starred Schwa restaurant is among the nation's most difficult to secure, but on three nights in mid-January, iconoclastic Owner/Chef Michael Carlson and his four culinary mavericks relinquished the entire eatery to the Chicago Bailliage. On each evening, twenty-four din- ers experienced quintessential Schwa: no barriers between chefs and guests; the walls rattling with rock music; and no pre-printed menu, so that each dish was a surprise enthusiastically described by the stylishly inked chefs who served them. After an interactive Bourbon olfac- tory "test" designed to sharpen the senses, dinner unfolded with eleven gor- geously plated, flavor-packed offerings that showed diners why GQ magazine called Schwa the "most revolutionary res- taurant in America." On the final day of the Schwa takeover, Chambellan Provincial/Bailli Mon Roldan thanked Chef Carlson and his superb squad for hosting this culi- nary concert and presented them with a Chaîne plaque. To get the full Schwa experience, one must let go of fine-dining conventions and become immersed in a piece of performance art that engages all of the senses. Chef Carlson possesses the uncompromising vision of a mad genius, and Chicago Bailliage mem- bers were thrilled to participate in his Schwa show.
