Oh, What a Night! BY MARIE ADDARIO, Vice Chargée de Presse National BAILLI DOMINICK ADDARIO knows that when a pro- fessional member is also a bailliage officer, great things happen. On December 7, Vice Conseiller Culinaire Charles Stuart, food and beverage manager of the five- star/five-diamond award-winning Fairmont Grand Del Mar in north San Diego, predictably orchestrated an extraordinary holiday dinner for the La Jolla Bailliage. Following the champagne reception but before the whiff of coastal night wafted upon the picturesque patio, attendees moved into the beautiful Manchester Salon, named for the resort's former owner, La Jolla Maître de Table Hôtelier "Papa" Doug Manchester. Chef de Cuisine Dennis Cortez designed a sumptuous menu replete with holiday tastes: parsnip, juniper berry, smoked venison demi-glace, dried fruits. Bailli Addario served two wines with the entrée, each lending a different note to the pairing: a Syrah, with its blackberry, cassis, and bacon notes (served at the White House), and a Pinot, with its mineral and plum highlights. The showstopper, however, accompanied the cheese course: 1927 Alvear Solera Pedro Ximénez from Montilla-Moriles, Spain. Its traces of chocolate and prunes and appealing nectar and bold viscosity made it a perfect pairing for the finale.
