Roman gladiators carry out a seven-foot shark with its mouth open, a shark which had been alive and swimming a few days before the dinner. This introduction to the first course was a shock to our guests, but the presentation was as unique as the shark fin soup that was then served. What was your favorite Chaîne event and why? I don't believe I have one favorite Chaîne dinner. There have been so many wonderful dinners throughout the years. Because of the innova- tion of Las Vegas and the numerous celebrity chefs who have made it their home and supported the Chaîne, a majority of our guests from various bailliages have agreed that the best Chaîne dinners they've ever attended have been in Las Vegas. This is quite an accolade from people who have been guests at our events throughout the years. What would you like to say to our membership regarding the upcoming Grand Chapitre in Las Vegas? Whether or not you've been to Las Vegas before, you will never expe- rience a more elaborate Chaîne meeting than one held in the "city of entertainment." The Grand Chapitre 2016 "Viva Las Vegas" is sure to be one of the most memorable meetings ever. Mike Severino and our team at Southern Glazer's Wine and Spirits of Nevada will make sure this event is extraordinary. How has the founding of the Cleveland Clinic Lou Ruvo Center for Brain Health changed your life? The Cleveland Clinic Lou Ruvo Center for Brain Health has not only changed my own life and the lives of my family and friends, it has helped thousands of patients, caregivers, and their families who are affected by horrible neurodegenerative diseases. None of what we have accomplished could have been done without our annual Power of Love gala supported by so many great celebrity-chef friends and the remark- able wine and spirits suppliers. Yes, dining, wine, and spirits have truly set the Power of Love gala apart from so many other charitable events. On an ordinary evening, how do you like to dine and on what favorite food? My favorite meal includes simple and organic foods cooked by my 92-year-old mother, Angie, whom I often refer to as Las Vegas's first celebrity chef, or meals prepared by my wife, Camille. Las Vegas is always evolving. What do you predict will be its next phase? Over the decades, Las Vegas has continually reinvented itself. This new chapter brings us more famous and amazing celebrity chefs, with each one sharing their unique and creative cuisine. It is no longer only the entertainment capital of the world—it could be the food capital of the world. We have more celebrity chefs than cities ten times our size.
