Warm Winter Views at BY ROSALIE LOWERY, Vice Chargée de Presse ON JANUARY 10, Bailli John Dale Kennedy greeted Springfield Bailliage members who gathered to welcome the New Year at the Island Bay Yacht Club. Executive Chef James Hamilton and his team designed the deli- cious five-course menu. The "Warm Winter Views" event theme was apt, as attendees warmed themselves with culinary delights while gazing out at the wintery lake scene. The star of the meal was the Berkshire pork chop, whose tomahawk cut gave it a somewhat prehistoric dinosaur look. Diners didn't hesitate to use their fingers to reach every last morsel of the tender pork on the bone. Chef Hamilton revealed that it had actually been sent to the club by mistake; rather than refuse delivery, he challenged himself and his team to showcase the qualities of the cut. Chambellan Provincial Honoraire Geoff Bland pulled out a few surprises in the beverage department, choosing Broadbent Fine Rich Sweet Madeira to comple- ment the mushroom consommé and Chase English Potato Vodka to accompany the buckwheat pancakes. Both were served in souvenir Chaîne shot glasses. Attendees appreciated this relaxed, cozy event, especially after the frenzy of the holiday season.
